I always use ISO64 and set the shutter priority to 1000, i find this works very well, even better than stopping down the exposure, thats what i use anyway.

Yes, you should capture in RAW mode every time unless you really need to put more pictures on your card. The CCD in your camera captures more detail than will fit into the 8 bits/channel of the JPEG file format so the camera processes the available data into thwt it thinks the picture ought to look like. With RAW mode you can save everything the CCD sees and process the image on your computer when you get home which has two advantages - firstly your computer at home is bigger and more powerful than the little one in your camera and secondly you can set the parameters for each picture.
In my case I use Adobe Photoshop Elements 3 and Adobe's RAW plugin which works just fine, allows me to vary the exposure 4 stops either way, set colour temperature, brightness, contrast, black level and saturation and has sharpness and noise reduction controls before I've even started the standard editing. There's a lot more detail in both shadows and highlights that can be emphaised in the final image.
One inconvenience is that the RAW files don't show up as thumbnails in Windows, so I use the RAW + JPG mode in my camera that produces a fine resolution JPG as well so I can see a JPG version of the picture before deciding whether it needs more work.
Other downsides - 39 shots on a 512MB card compared to 89 extra fine JPGs, extra downloading time, more work, more HD space etc.
Upside - better pictures!
